Classic Gin & Tonic (G&T)

This is a classic cocktail that all gin drinkers should know how to make – it’s light, delicious, versatile and can be enjoyed all year round. The flavour varies with the ratios and the quality of the ingredients – it’s all about the gin and the tonic after all.


  • 50mls Daylesford Spirit Australian Dry Gin
  • 100mls tonic water
  • Fresh lime wedges
  • Sprig of rosemary (optional)
  • Ice


  • Rocks glass or highball glass.


  • Pack a large glass with lots of ice.
  • Pour the gin over the ice.
  • Squeeze in a wedge of lime.
  • Top with the tonic water.
  • Garnish with a lime wedge.


  • If you prefer your cocktails a little less gin forward, try a 3:1 ratio and use 150ml of tonic.
  • Always use freshly opened tonic water; using flat tonic water will spoil the cocktail. We recommend buying the small bottles of tonic water for this reason. Small bottles are also more readily recycled than plastic.
  • Larger ice cubes are better as they have a smaller overall surface area and are slower to melt.
  • Fresh lime is a must, avoid the concentrate.
