A limited-release Australian single malt whisky crafted in the heart of Victoria. Our first batch is hand-selected and aged in bourbon casks, then finished in PX and Oloroso sherry casks, capturing the depth of old-world tradition with the character of Australian craft distilling.
Styled in the Highland Scottish spirit, it reveals rich notes of honey and maple with caramel flavours and a soft hint of freshly cut summer grass. Made with harvested Mount Franklin pure water and Australian grain, this luxurious whisky is dedicated to our dear friend, Kyleen Bonita Hall.
The Triple-Barrel Finishing Process
Triple-barrel finishing is a rare and complex maturation technique that few craft distillers employ. Our Triple-Barrelled whisky begins its journey in bourbon casks, where it develops foundational sweetness and vanilla character. The spirit then transfers to PX (Pedro Ximénez) sherry casks, where it absorbs intense dark fruit sweetness and rich caramel notes. Finally, a finishing period in Oloroso sherry casks introduces dry, complex fruit and warming spice.
This three-stage process creates layers of flavor that would be impossible to achieve in a single cask, resulting in a whisky with remarkable depth and complexity. Each transition adds new character whilst preserving the best qualities from the previous stage, creating a harmonious final expression.
Tasting Notes & Flavor Profile
This Highland-style whisky reveals a sophisticated progression from nose to finish:
On the Nose: Initial aromas of honeyed fruit emerge, followed by subtle warming spice and hints of dried stone fruits. The mount Franklin water and pure ingredients create a clean, bright aromatic foundation.
On the Palate: The whisky develops warming caramel and rich maple sweetness, complemented by layers of plum, fig, and walnut from the sherry cask influence. A full-bodied mouthfeel carries these flavors with grace, finishing with a soft hint of freshly cut summer grass and gentle oak spice.
On the Finish: The finish is smooth and lingering, with the dry fruit and spice characteristics of the Oloroso cask gradually fading into warming oak and subtle vanilla.
Understanding PX & Oloroso Sherry Casks
The choice of PX and Oloroso casks is deliberate and specific to this whisky's flavor profile. PX (Pedro Ximénez) sherry is a deeply sweet wine that imparts rich dark fruits—raisins, prunes, figs—alongside toffee and butterscotch sweetness. This first sherry finish gives the whisky its luscious, fruit-forward character.
Oloroso sherry, by contrast, is dry and complex, contributing walnut, almond, and hazelnut notes alongside warming spices like cinnamon and clove. The final Oloroso finish balances the sweetness from PX with dry fruit and subtle sophistication. Together, these two sherry casks create a beautifully balanced spirit that marries sweetness with complexity.
